"This is a magical treat!" – that’s exactly what my son says as he spreads jam on slices of bread and eats them one after another. "Oh, and delicious!" - says the husband and eats the jam with a spoon, washing it down with tea.
And I arrange a ritual for myself: pour a cup of cappuccino, buy my favorite brioche buns, put a socket with this wonderful delicacy on the table and plunge into my dreams - by the way, I’m very good at this. But then the whole day I seem to be flying on wings, and absolutely no sad thoughts come to me, I don’t even react to the remark of the head of the department - it seems that my nervous system is strengthened a hundred times from a few spoons of such jam.

I prefer to take varieties like “Hungarian” or “Renklod” so that they are juicy, sweet and aromatic.

Ingredients:
- plum fruit – 500 g,
- granulated sugar (white) – 400 g,
- cocoa powder – 20 g,
- butter, fat content not less than 82% – 35.





First of all, we sort out the fruits. If you come across fruits with spoiled pulp or worms, be sure to throw them away, as this will not only spoil the taste of the jam, but is also harmful to health. Then we remove the seeds from the fruits and twist the plums with a meat grinder.




Pour the plum mass into a saucepan, add granulated sugar, stir and cook the jam over low simmer for about 15 minutes.

We decided to invite you to prepare plum jam with cocoa for the winter. It turns out surprisingly fragrant, a beautiful thick brown color. Just imagine: morning, a cup of scalding coffee and toast with plum and chocolate jam... Just a great start to the day! Ingredients:
- 1.5 kg plums (pitted);
- 500-600 g sugar;
- 5 tablespoons of cocoa (with a heap).

The amount of sugar indicated is approximate, it depends on the acidity of the plums.
From the specified amount of ingredients, approximately 1 liter of jam is obtained.

We start by preparing the plums. Wash the plums and remove the stems.








Pour a couple of tablespoons of water into the bottom of a wide saucepan to moisten it. Then lay out the plums, cover with a lid and put on fire.





First, heat the plums over medium heat (until the water hisses), then reduce the heat to minimum. Cook for 20-25 minutes. During this time, the plums will release juice and become completely soft.







Cool the plums a little. And rub through a holey colander to remove the skin. If the plums are soft, they are wiped quickly and easily. But the jam turns out homogeneous and smooth. You can, of course, grind the plums with a blender, but in the finished form you will still hear pieces of skin, it will not be so homogeneous. Therefore, I recommend spending 5-10 minutes straining the plums through a colander.





The waste is minimal - just the skin, and it doesn’t take much time.





Return the pureed plums to the cooking pot.





Add 400 g of sugar. Mix and put on fire. Bring to a boil over medium heat, then reduce heat to low and simmer for 30 minutes. Stir every 8-10 minutes to prevent the jam from burning.







Add cocoa to the remaining 100 g of sugar and mix well. For now we put it aside - let it wait in the wings.





After 30 minutes of cooking it became a little thicker (just a little) and became darker in color.
Add the sugar and cocoa mixture and mix thoroughly.





And here you need to really taste the plum-chocolate jam. If the plums were sour (which is actually rare for autumn varieties) or you have a sweet tooth, you can add sugar, 100 g or even more - to suit your taste.





Mix the jam thoroughly again and continue cooking over low heat. Cook for 15 minutes, stirring 3-4 times during this time.





In the meantime, we will prepare the jars and lids. We wash and sterilize them. Boil the lids for 4-5 minutes. Wipe hot sterilized jars dry. Spread the plum jam with cocoa, filling the jars to the very top. Immediately seal (screw or roll up) the lids.





Turn the jars over and leave them until they cool completely. Store the cooled jam in a cool, dark place.




Tips and tricks:
Plums for this jam are only suitable for autumn varieties. To achieve such a thick consistency of jam from early (summer) plums, you will need a lot of sugar. And, since summer plums won't produce such a rich, dark color, much more cocoa.
If you want a slightly darker jam (milk chocolate color), add 3-4 tablespoons of cocoa. It also turns out quite aromatic.




It is very important that the jam is completely prepared, so I advise you to make sure of this. To do this, place a spoonful of jam on a clean plate. The finished jam will not spread, but will remain in a lump just as you put it. If unprepared, it will spread over the plate.




Plums are the best choice for cocoa company. You can believe me: I tried to make both chocolate-apple jam and chocolate-pear jam... It also turns out delicious, but still not quite the same.
