Classic recipe for Dukan pancakes with kefir

  • low-fat kefir – 0.25 l;
  • oat bran – 30 g;
  • wheat gluten (or adequate amount of wheat bran) – 15 g;
  • dry baker's yeast – 5 g;
  • chicken egg – 2 pcs.;
  • corn starch – 20 g;
  • salt, sweetener - to taste;
  • olive oil - how much will be needed for frying.

Cooking method:

  • Remove the kefir from the refrigerator in advance and place it closer to the stove or radiator so that by the time the dough is prepared it will be at room temperature or even a little warmer.
  • Add sweetener and yeast to kefir. Stir. Leave for 20 minutes in a warm place.
  • Grind the bran to flour.
  • Break the eggs, separating the yolks from the whites.
  • Add yolks to kefir. Whisk.
  • Add starch and bran. Stir until smooth.
  • Beat the egg whites with a mixer until stiff. To make them whip better, cool them and add a pinch of salt to them while whipping.

  • beef or chicken liver – 0.5 kg;
  • chicken egg – 1 pc.;
  • onions – 100 g;
  • corn starch – 40 g;

Cooking method:

  • Wash the meat by-product, peel off the film, cut out the vascular formations, cut into medium-sized pieces. Grind by passing through a meat grinder.
  • Peel the onion, cut into 4 parts, and turn through a meat grinder. Mix onion puree with liver mass.
  • Add eggs and starch. Mix thoroughly.

And for them, take no more than one teaspoon of vegetable oil, ideally it should be cold-pressed olive oil.

Sugar, salt and spices

Sugar, of course, cannot be used, but you can do without it: take the sweetener that you have on hand when drinking Dukan tea. Spices - there are no special restrictions here.

Before adding the sugar substitute in tablets to the dough, you need to thoroughly grind it to a powder, then it will quickly dissolve during the preparation of the pancake dough.

Filling

If a pancake recipe calls for filling, it must be prepared strictly following the Dukan rules: cottage cheese, cheese, meat, and fish should be low-fat.

Cruise

At this phase, you can use vegetables, which means there are many more filling options for pancakes. In addition, additives in the form of vegetables, grated or prepared as a puree, can be added to the dough itself.

Dukan diet recipes: kefir pancakes according to Dukan

I thought for a long time about how much kefir to write in the recipe and decided to leave 300 ml, although I add 400 ml myself.

Why? Because if you add 400 ml, then you should have a great non-stick frying pan that never lets you down! I recently bought one for myself and now I can fry anything without a single drop of oil.

If you have the same frying pan, then feel free to add 400 ml!

I immediately foresee questions about the absence of gluten - if there is none, then add another spoonful of starch, but only in this case, recalculate the DOPs, i.e. Divide the resulting portion of pancakes into 1.5 days.

Kefir pancakes according to Dukan: preparation

I don’t put the pancake dough in a warm place or create any additional conditions, but simply cover it with a plate and set it aside.

After a while, we start frying the pancakes - I repeat that I do not use oil, although you can do this if you wish. The frying pan needs to be well heated, and then reduce the heat to slightly above medium power. For example: on my electric stove, each burner has 9 power levels, first I heat the frying pan at 9, and then reduce the power to 7.

Immediately before frying, add baking powder to the dough, mix and start the process

Everything seems simple here, but I want to give a few tips that will help you prepare Dukan pancakes without any problems:

  • Try not to fry 4-5 pancakes at once, start with 2, watch how they turn over, and only then, if desired, increase the number of pancakes in the pan. I fry 2 pieces. - the quieter you go, the further you'll get.
  • The smaller the pancakes, the better the result! For me they turn out to be 5-7 cm in size, if larger, then even in a frying pan with a good non-stick coating it is problematic to remove them, because. the dough is runny. Don't try to make pancakes out of pancakes!
  • To pour the dough, I use a regular 50 ml vodka shot glass. - this is just enough to prepare 2 pancakes.
  • If you have problems with turning the pancakes, then do this: first pry the edge with a spatula, and then carefully move the spatula under the pancake with small flickering movements from side to side, as if cutting it from below;
  • Be patient, because... There is a lot of dough and it won’t take 5 minutes to fry - I fry the pancakes for 15-20 minutes.

Pancakes become much tastier when they cool. You can come up with a variety of fillings to suit your taste! For example, I really like it with honey, but I’m on Stabilization. I can recommend you yogurt or cottage cheese with a sweetener, and among the salty options I really like this one:

I would like to draw your attention to the fact that you get a lot of filling, so I do not recommend filling everything with yogurt at once, but take exactly the amount that you plan to eat.

The indicated amount of ingredients is for one serving. If you are preparing bran pancakes for the whole family, increase the amount of ingredients several times.

To prepare bran pancakes according to Dukan you will need:

  • oat bran – 2 tbsp.
  • cottage cheese – 2 tbsp.
  • starch – 1 tsp.
  • sweetener – 0.5 tsp.
  • baking powder - a pinch
  • egg – 1 pc.

Beat the mass using a blender or food processor, add cottage cheese.

Stir the pancake mixture until smooth, add chopped oat bran.

The next step is adding starch. To prepare dietary Dukan pancakes, we use only corn starch.

Pour baking powder into the dough and bring the dough until smooth.

Pour the diet dough into a hot frying pan and fry for 2 minutes. Turn the pancakes over and cook for a few more minutes until done.

Our dietary Dukan bran pancakes are ready! They can be served with aromatic coffee, hibiscus jam or milk jelly.
