Meatballs are usually prepared with gravy. Today we will cook turkey meatballs in sour cream sauce. This sauce turns out liquid. If you want a thicker sauce, you will need to thicken it. There are several nuances here: either roll the meatballs in flour and fry (in this case, the sauce will thicken itself thanks to the flour), or dilute the flour with water and add to the sauce. I used the second option in this recipe because I don't like the flour to burn when frying.

Rice must be boiled in advance. You can also use raw rice, but then the meatballs will turn out like hedgehogs. It's up to you to choose.

At this time, combine the flour with water, stir well with a whisk so that there are no lumps.

Add the mixture to the meatballs and heat for a couple more minutes. The sauce will thicken.

General technological principles of the process of preparing turkey meatballs

1. Preparatory stage. You need to defrost or prepare the minced meat yourself, boil the pre-washed rice until half or fully cooked, peel, finely chop or grate the vegetables.

2. Sauté sliced carrots and onions and place in minced meat, which must be salted, seasoned with spices and be sure to knead well with your hands and beat.

3. Meatballs are only round in shape. Pour sauce or boiling water over the formed meat balls, and then simmer or bake. Usually semi-finished products are pre-breaded in flour and lightly fried on both sides. For children's and gentle therapeutic nutrition, meatballs are steamed.

When serving, garnish the turkey meatballs with fresh herbs and pour over the gravy formed during stewing. As a side dish for a cooked hot main course, you can offer: pasta, potatoes, cereals, vegetable salad or stew.

Successful turkey meatballs. Useful culinary tips and tricks for preparing dishes

It is preferable to use homemade minced meat by chopping chilled, skinless white meat from a fillet or turkey thigh in a meat grinder on the middle rack. You can skip 2 times.

Onions, ground in a meat grinder along with the meat pulp, will add juiciness to the finished dish. If you use store-bought minced meat, it won’t hurt to add onion, only very finely chopped.

The bun for the cutlet mass must be dry so that the structure of the meatballs does not become sticky.

To get juicy meatballs, you need to fill them completely with sauce so that they disappear.

If you remove the foil covering the meatballs 10 minutes before the end of the baking time in the oven, they will be covered with a beautiful golden brown crust.

Many people believe that meatballs differ from cutlets due to the presence of rice in their composition. Indeed, cereals are very often added to minced meatballs. However, it is not considered an essential ingredient of this dish. To make the meatballs soft and juicy, you can use eggs or bread. But the sauce in which the meatballs are stewed after frying must be present. This is the main difference between this dish and traditional cutlets. The fact is that cutlets are a dish of French cuisine. It was originally customary to serve it with a side dish, such as mashed potatoes. But we owe the appearance of meatballs to the Turkic peoples, who always served them separately with a thick gravy, similar in thickness to sauce. Currently, this gravy is most often made from tomatoes or tomato juice with the addition of onions and peppers. Meatballs can be prepared from any meat, but this recipe uses turkey fillet - the most dietary and healthy. This dish is ideal for those who watch their figure and their health. It will also fit perfectly into a child's menu. The addition of eggs and bread makes the turkey meatballs juicy and tender.

How to cook with photos step by step

Grind the turkey fillet with the peeled onion in a meat grinder.

Pour water over the bread and leave for 5-7 minutes. Then drain the water and add it to the minced meat. Beat the egg in there too. Mix everything thoroughly with your hands and add salt to taste. Form into round balls the size of a small apple.

Cut the remaining onion into cubes. Peel the pepper from seeds and also cut into cubes, but larger ones. In the cold season, you can use frozen peppers; in this case, before cooking, you just need to remove them from the freezer; there is no need to defrost them. Heat a frying pan with a little oil, fry the onion, then add the pepper to it.

Fry the vegetables for a couple more minutes. After this, pour in the tomato juice and simmer everything for 7-10 minutes.
Heat a little vegetable oil in another frying pan.

Place the meatballs and fry them lightly until golden brown.

Place the turkey meatballs in a heatproof saucepan, pour the sauce over them and simmer for 15 minutes until tender.

Then transfer to plates, do not forget to pour them with the tomato sauce in which they were cooked.

After the dish has cooled, you can eat it.
